A Vibrant Fusion of Flavor and Wellness: Purslane & Basil Pesto
This Purslane & Basil Pesto is not only bursting with fresh, vibrant flavors but also packed with a wealth of health benefits. Both Purslane and Basil are powerhouses of essential antioxidants, vitamins, minerals, and anti-inflammatory compounds, contributing to overall wellness and vitality.
Often dismissed as a simple weed, Purslane (Portulaca oleracea) is actually a nutritional gem, loaded with omega-3 fatty acids, more than many fish, and boasting high levels of vitamin A, vitamin C, and magnesium. Its antioxidant-rich profile can help reduce oxidative stress and inflammation, making it a valuable addition to any diet.
In fact, studies have shown that the consumption of purslane may support heart health, enhance immune function, and even promote skin health due to its high beta-carotene content.
Ingredients:
- 2 cups of washed Purslane Microgreens* (leaves and stems)
- 50g of fresh basil leaves
- 1 clove of garlic
- 50g of toasted almonds
- Juice from half a lemon
- Olive oil
- Celtic sea salt and cracked black pepper, to taste
Method:
- In a food processor, combine the toasted almonds, garlic, basil, lemon juice, and purslane.
- Pulse the mixture until it’s well combined and finely chopped.
- With the processor running, slowly drizzle in olive oil until the pesto becomes smooth and emulsified.
- Season with Celtic sea salt and cracked black pepper to taste.
This delicious pesto can be drizzled over roast vegetables, mixed into quinoa or organic/gluten-free pasta, or spread over sandwiches for a healthy, nutrient-packed meal.
Stored in an airtight container, this vibrant pesto will last in the fridge for 5-7 days, allowing you to enjoy its benefits throughout the week.
